Beans contain complex carbohydrates known as oligosaccharides, especially raffinose and stachyose. The human body cannot completely break down these carbohydrates because we lack the enzyme alpha-galactosidase. This inability to digest these carbohydrates can eventually lead to gas and bloating as they ferment in the large intestine.
