Black shadow-dried raisins are valued above all else and are rightfully considered one of the healthiest dried fruits. In Uzbekistan itself, and throughout Central Asia, people prefer "soyagi" raisins (which literally means "shadow").
Ripe grapes are cut in whole bunches and carefully hung in the attic of the house or under a special canopy. Drying raisins usually takes from two to four weeks, but due to the cooler climate in Urgut - even up to 6 weeks.
