The reason for the bitter taste is amygdalin - it refers to cyanogenic glycosides, a source of hydrocyanic acid, which is released when taken orally. Therefore, uncontrolled consumption of apricot kernels can cause poisoning.

Amygdalin is a compound that has four molecules: two of them are glucose molecules, the other two are cyanide and benzaldehyde molecules. The last two molecules have unique metabolic properties.
